Add the diced pumpkin, rosemary, salt and cook for 10-15 minutes with the lid on, until cooked, adding a little water from time to time.
- Clean the shrimp by removing the head, the legs and the caparace and then remove the intestine by cutting the back of the shrimps. Sauté the shrimp in a pan with olive oil, add salt.
- When the pumpkin is cooked, remove the garlic and use a blender to purée it. Drain the pasta al dente, toss with the pumpkin cream and shrimps.
- Skip the pasta with pumpkin and shrimps for a few minutes before serving, if you prefer, with raw olive oil.
Combine the pasta with mushrooms, spinach and pumpkin puree. Serve sprinkled with chopped walnuts and drizzled with pumpkin oil (optional.
