- Make ready 300 g egg noodles
- Prepare 3 tbsp veg oil

- Get 4 tbsp light soya sauce
- Get 4 tbsp dark soya sauce

- Make ready 75 g sweet potato (pureed and optional)
- Get 2 eggs
- Take 200 g beansprouts
- Prepare 100 g spinach
- Take 1 lime (cut into wedges) (optional)
It was a little tricky to make because my pan was on the small side for it. definitely tastier than the restaurant version (my first encounter with mee goreng). Lots of fresh vegetables, a little minced mutton and high heat. A dish with just a touch of the desired flavourful burnt. Served with a side dish of fresh cucumber and tomato sauce. hmm . heavenly!!!
Instructions to make Mee goreng:
- Boil dried chilies in boiling water for 10 mins and blend them into paste, set aside.
- In a pot, boil the potatoes until soft. Set aside.
- Prepare the noodles as the package instructions.
- In another pan, add the eggs and scramble them and cook until 70% done. Set aside.
- Heat a frying wok over high heat. Add the oil and garlic until fragrant.
- Add the chicken and squid and cook for 4 mins.
- Now add chili paste and fry for a min.
- Add the noodles, both soya sauce, ketchup, vinegar, sweet potato puree and fry for 4 mins.
- Add egg, bean sprouts, spinach, potatoes and mix well.
- Serve with wedge of lime.
