I came up with this chickpea "tuna" after I served him the curried chickpea salad from my cookbook and he went crazy for it. I knew I could do the same thing with chickpeas and treat it like a tuna salad. Quinoa, tuna, and chickpeas tossed with baby spinach, celery, fresh mint and cilantro, spring onions and baby tomatoes make a perfect dinner salad.
