For ingredients, Rasa Malaysia recommends dried oyster and chicken breast fillet. Do stir occasionally to prevent the rice from sticking the bottom of the pot.

Steps to make Oyster Minced Chicken Congee:
  1. Cook rice with rice cooker and set it aside
  2. Boil a pot of hot water, add oysters and cook for 30 seconds,Set it aside
  3. Add olive oil into a soup pot
  4. Add garlic, ginger and onion into the pot and cook for 5 minutes
  5. Add minced chicken and stir until it‘s cooked
  6. Add cooked rice and water to a boil and simmer uncovered for 30 minutes.
  7. Once the rice has smoothed out and the congee is the texture you'the like, add oysters and celery, bring it to boil again and cook for 5 minutes
  8. Add salt and pepper

Turn heat off, and serve garnished with spring onion. Open the lid and discard the corn cob pieces. Shred chicken with two forks and return to the congee. Season with salt and pepper and mix well. May substitute chicken with other meat e.g. pork/beef.
