Inari Sushi is sushi rice in a pouch made of seasoned aburaage (deep fried thin tofu). It is sweet but it complements the sourness of sushi rice. It is quite simple to make Inari Sushi, particularly when you use store-bought seasoned aburaage.

Named for the Shinto god Inari, Inarizushi is also known as "brown bag sushi" because the rice is packed in seasoned aburaage, or fried tofu pouches. Because the aburaage keeps the rice held together so well, and it's usually made with just rice inside, inarizushi is easy to eat, even when using your hands.

Steps to make Inarizushi (inari-sushi):
  1. Roll the Aburaage with a rolling pin to help the pockets open easily, cut them in half and place them onto a strainer. Carefully pour boiling water over Aburaage to reduce excess oil from aburaage. Make sure that thay gets cold enough to be touched by hands, then squeeze the excess water out.
  2. In a large pot, combine dashi stock, sugar and soy sauce. Bring it to a boil, add the aburaage in the pot and place a drop lid.
  3. Simmer aburaage until the liquid gets absorbed into the Aburaage and let them cool down at least for 3 hours in the fridge.
  4. Mix vinegared rice and sesame seeds. Take 40g of vinegared rice and stuff it into the aburaage. Close the aburaage and place open-side down on a plate.

Cut the aburage in half horizontally, and carefully separate the sides of the cut section with your fingers to form a pouch. Inarizushi (or, inari-sushi) is another unique variety of sushi, a sweet bean bag-looking morsel, made with a pocket of sweet deep-fried tofu known as inari filled with sticky Japanese sushi rice. In Japan, inarizushi can be widely found in all variety of sushi restaurants, ordered as a side dish at many noodle and teishoku (set meal.
