- Now Add mayo and slowly mix with a fork until mixture is thoroughly moist. If it seems a little too dry you can always add about a teaspoon or so. You want it to be a little firm so the crab cakes won't fall apart while frying. Form mixture into balls and let set in the refrigerator for at least 30 mins.
- Add the remaining bread crumbs to a plate. Set aside. Pour oil in skillet and set range eye to medium heat. Roll each crabmeat ball in the breadcrumbs. Make sure they're coated evenly.
- Place crabmeat ball in between your hands and press lightly enough to form patties. Add to skillet. Cook patties on each side for about 6 minutes or so or until golden brown on each side.
- Drain on paper towels
- Serve with a salad and remoulade
