We wanted to see squid outside of the fried calamari ring, and so we scored it to keep it tender and sauteed it in a flavor-packed stir-fry. Stir in the lime juice, and then toss the squid mixture with the noodles. There is something particularly satisfactory about stir frying, especially when you have great ingredients to toss into the wok. Add oil to a pan and heat.

- Start the wok with the oil and add the garlic and ginger, stir for 10 seconds.
- Add the cubed zucchini, then the leeks and mushrooms

- The mushrooms have to be rehydrated before adding to the pan. Fresh mushrooms work well too.
