  1. Bring a large pot of water to the boil. When boiling, using tongs, dunk the octopus in and out of the water 3-4 times - this helps to make it tender. Leave it in, cover and simmer on low for about 50 mins
  2. Drain the water then put it back in the pot. Cover and leave for about 20-30 mins
  3. Chop up the octopus and put it in a bowl. Add some chopped garlic, olive oil, lemon and parsley. Mix well. Cover and leave in the fridge for a few hours or even over night
  4. Mix well and remove garlic before serving. Serve on a bed of tomatoes with a wedge of lemon :)
