  3. Prepare 1 to 2 tablespoons Cauldron-cooked shirasu (boiled and dried tiny sardines)
  4. Get 1 handful Kimchi
  5. Make ready 1 dash Sesame oil
  6. Get 1 Nori seaweed

We usually top the chilled tofu with katsuobushi (dried bonito flakes), green onions, and grated ginger. For a vegan or vegetarian version, you can definitely skip katsuobushi and top with. Chilled Tofu is a great appetiser with summer drinks. It is one of the simplest dishes you'll ever encounter, but toppings gives you depth of flavour to it.

Instructions to make Healthy and Nourishing Chilled Tofu:
  1. Roughly chop up the kimchi.
  2. Add natto which has been mixed with the sauce packet that comes with it to the mixture in 1, together with the shirasu. I use the natto pictured here…it was cheap and the beans were nice and big - I recommend it!!
  3. Rinse the chilled tofu lightly, cut into easy to eat pieces, and put on a serving plate.
  4. Put the mixture from Step 2 on top of the tofu in Step 3, and drizzle with some sesame oil. Scatter some shredded nori seaweed on top and it's done.
  5. Trivia: You can tell whether your whitebait fish are fresh by the way they curve up! Make sure to check them when you're buying them.

Chilled Tofu is a great appetiser with beer or any other drinks, particularly in summer time. Chilled tofu (Hiyayakko) is a HEALTHY appetizer that requires NO COOKING. It was (BY FAR) the EASIEST thing we've ever made. Tofu has a distinctive texture and taste. It has a creamy mouthfeel, almost like soft cheese, but the flavor is very mild.
