Gently dip the tentacles into and out of the water 3-4 times. then leave in and simmer on low for 15 mins. Switch off and leave them in the water for at least 30 mins
  2. After 30 mins, transfer to a plate. Make a dressing of olive oil, parsley and lemon. Drizzle all over the octopus and leave to marinate for an hour in the fridge
