Nadan Koonthal Roast or squid roast is a Kerala style preparation of calamari, very spicy, and very traditional. Its dry fry, though you can also make it Koonthal roast is very popular in North Kerala, where I live.though the use of "kudampuli" is not so very popular here in Calicut, I sometimes add. Spicy and flavorful Kadai Paneer is one of the most popular paneer recipes. Paneer and bell peppers are cooked with freshly ground masala!
Instructions to make Koonthal fry or squid kadai!!:
- Put the marinated squid in a kadai along with the tomato, red chilly powder and a little bit of water. (Make sure you pour only a little bit of water coz while cooking water comes from tomato and squid)
- Cook covered for a while and when the squid is almost cooked open lid cook so that the water completely evaporates. (You may increase the flame well if water is too much).Make sure you saute in between.
- When the water is almost evaporated add curry leaves and saute again. Add the coconut oil now and saute again.
- Once the water is gone add the onion and a bit of salt to this. Saute well till onion becomes brown and almost like fried. Add coriander leaves and remove from fire. Serve with rice, chappatis.
We use it to make stir fry and all sorts of things. We also use it for deep frying snacks and sweets. This dish is called Kadai Paneer because it's cooked in a kadai. May be it will turn into calamari fries or a spicy squid roast, who knows. I will updates as soon as I am done with that.
